Recipe of the week

As you know I have been on a super healthy eating regime. I made the most amazing Quinoa Pesto salad the other night. The ingredients are as follows

  • Warm Quinoa with dusted Parsley
  • Lettuce of your choice but please include Arugula
  • Basil Leaves
  • Kalamata Olives
  • Green Apples diced
  • Avocado diced
  • Feta
  • BBQ Chicken strips
  • Orange slices
  • Cucumber diced
  • Roasted Bell Pepper diced
  • Roasted Aparagus diced
  • Roasted corn kernel
  • Balsamic Vinaigrette dressing

Mixed all vegetables with Pesto Sauce๐Ÿ˜˜
