Not too long ago, I would turn up my nose at the idea of having a salad for a meal. After all, a salad is a starter, not an entree. These days I live for a “Meal Salad”. I have created so many different versions of meal salads. My salads give me a much needed energy boost and they are also healthy.
It is very important that you take care of your body. As the saying goes, “Your health is your wealth.” So many people spend tons of money on clothes, shoes and many luxury items, but do not pay attention to their diet. Well, it is not too late to start eating healthy on an affordable budget.
Take a look at this salad I prepared for my family last night.
My Power Salad
After I ate this salad, I was stuffed. It was tasty and delicious 😋 . Every ingredient was seasoned differently.
Sliced Radish (seasoned with black pepper salt and lemon juice)
Diced Red Onions
Black Bean and Corn (seasoned with salt, pepper, paprika , pesto sauce)
Channa or Garbanzo Beans with shredded carrots (seasoned with salt, pepper, curry, turmeric, lemon pepper, diced parsley cayenne pepper, olive oil) cooked for 3 mins in a sauté pan
Grilled Cod Fish Fillet (seasoned with salt, pepper and lemon juice )
All salad ingredients were mixed together in a large bowl (cold ingredients first, followed by warm ingredients) Garnished with diced parsley and topped with Cod fish. Dressing of choice was Balsamic Basil Vinaigrette. It was delicious 😋
