Pesto Shrimp, Spinach Fettuccine
I have been avoiding pasta dishes for some time. Of late however, I have discovered some healthy pasta options made from beans like chicpeas and lentils and vegetables like Spinach.
Today, I made a Pesto Shrimp Fettuccine with a Spinach pasta. Very healthy and yummy.
Mise en place
Glass bowl to season shrimp
3 small bowls for sliced vegetables
Large dish for finished product
2lbs Shrimp (seasoned in Pesto Sauce and lemon juice)
2 boxes of Spinach Pasta
I Cup of Mushrooms
2 Cups of Asparagus
1 Tbsp of crushed garlic
1/4 Cup of Oilve Oil
15 Basil leaves
7 Cherry Tomatoes cut in half
Sea salt and Black pepper
1/4 Cup Parmesan Cheese
Boil pasta for about 8 minutes or until al dente.
Add Olive oil and Pesto Sauce,then garlic to hot skillet. Add sliced mushrooms, then uncooked shrimp.Add cooked Fettuccine to skillet, then Asparagus. Finish off with Cherry Tomatoes, salt and pepper and Parmesan Cheese. Add a bit more olive oil for moisture, (Optional)
