Grilled Shrimp & "Cauliflower Grits"

One of my favorite Southern dishes is Shrimp and Grits. However, we all know what would happens if I were to eat that every week. I am not going to lie to you, I am a woman of a particular age and my metabolism has slowed down quite a bit. That being said, I have had to find healthy substitute ingredients for many of my favorite dishes. Shrimp and Grits included. So my substitute for grits and flour used in the original recipe is Cauliflower.Today, I made Grilled Shrimp and Cauliflower Grits. Full disclosure,I still used Heavy Cream and regular Cheddar Cheese, but I opted for the low calorie version.


Here is the recipe for Basia’s Shrimp and Cauliflower Grits:
2 lbs of Seasoned Shrimp Skewers (Shrimp seasoned to taste)
7 Cups Diced Cauliflower (You can dice the cauliflower yourself in a blender)
3 Cups Spinach leaves
1 Cup Seasoned Whole Kernel Corn
1 Whole Onion
1/2 Cup of Heavy Cream
2/3 Cups Cheddar Cheese
2/3 Cup of Shrimp Stock
2 Tbsp of Unsalted Butter
1 Tbsp of Minced Garlic
1 Tbsp of Cajun Seasoning
1 Tsp of Sea Salt
1 Tsp Paprika
1 Tsp Mrs Dash
Black pepper to taste
Finish off with Parmesan Cheese or some more Cheddar Cheese

Method:
