Basia’s Clay Pot

I want to share my recipe for my version of the Vietnamese dish “Clay Pot”. I love a Clay Pot and since I cannot get to my favorite Vietnamese restaurant right now, I decided to bring the Clay Pot to me.

I went a step further and added a Caribbean twist to my dish by adding chopped spinach. I also tried a healthier approach by using Cauliflower rice in one pot and Jasmine rice in the other. When using Jasmine rice, it is important not to boil the Jasmine rice too soft as it will have a pudding consistency. I suggest if you have never steamed Jasmine Rice, use parboiled rice instead. This dish is yummy, and is enjoyed most when served hot.

INGREDIENTS

Here are the ingredients I used for my Basia’s Clay Pot:

1 Tbsp of minced garlic

Sea Salt to taste

Black Pepper

1/3 Cup of Olive Oil

1 Tsp of All Spice

2 Tbsp Sesame Oil

1 Tbsp Smoked Paprika

2 Tbsp of Parsley Dust

1/4 Cup of Oyster Sauce

4 Cups of Chopped Spinach

1 Cup of Roasted Whole Kernel Corn (optional)

1 Tin of Stir Fry Baby Corn

1 Cup of Fresh Basil

2 Cups of Diced Carrots

2 Cups of Half moon Turkey or Pork Sausages

1 Cup of Pre Cooked Shrimp
